Aramark’s Sustainability Director for the West Region used MaetaData’s Open Fields Program to identify all purchases that qualified as Sustainable or Ethically Sourced (based on third party verification) and/or Plant-Based. A Food and Beverage Purchasing Inventory was generated using these qualifying purchases, while the original reports were analyzed to identify any sustainable or plant-based purchases that were missed in the Open Fields report. These purchases were compared to the overall food and beverage spend for all dining locations to determine the percentages for third party verified and plant-based spend.

Aramark/Hornet Hospitality aims to purchase local, seasonal, and responsibly raised, grown and sourced products whenever possible, which has a direct impact on people, animals, the environment, and the local community. Aramark’s global commitment to animal welfare and sustainable seafood throughout the supply chain is shifting the marketplace on products featured regularly at Sacramento State, like Cage Free eggs, American Humane certified poultry, Fair Trade certified team and coffee, and sustainably certified seafood. Plant-based alternatives to meat are also prioritized, with new vegan and vegetarian options offered on a regular basis in Residential, Retail, and Catering operations.
