Sustainable Cooking Demos
A brief description of the innovative policy, practice, program, or outcome that outlines how credit criteria are met and any positive measurable outcomes associated with the innovation:
In 2019, the Center for Sustainable Development partnered with the College's Dining Services (Aramark) to host a series of cooking demos highlighting sustainable cooking practices, healthy and local foods and cooking on a budget. Inspiration to coordinate such a series and marketing strategies was grounded in the campus-wide sustainability theme for 2019-20: food security.
The event provided students with hands-on learning experiences in campus kitchens and smarter decision making skills surrounding shopping and consuming food, as well as experience working with fruits and vegetables.
Focuses for the demos ranged from pickling peppers grown in student gardens, vegan holiday sides and crafting a meal under $10. Over the course of the fall semester, student, faculty and staff participation increased, and campus partners look forward to hosting more successful demos with university chefs in the spring.
