Attached is a list from our food services vendor, Aramark. Based on this information, the % is only 2.96. We also have The Centre for Food at our Whitby campus that serves the Bistro '67 teaching-inspired restaurant as well as the Pantry. The food for these locations is grown on-site where possible or purchased as locally as possible. The CFF is a Feast On certified facility, which indicates a minimum of 25% local food and beverage in purchasing.

A brief description of the sustainable food and beverage purchasing program:
Aramark at Durham College uses our local farmers with as much as they can supply us with. We use such farmers as Geissberger Farmhouse Cider, Gallery on the Farm, Pingle's Farm Market, Hy hope farm and Ashton Maple products. We also serve fair trade coffee in our Express coffee concepts. In addition to the campus food services provider, Durham College has an award winning Centre for Food building at our Whitby Campus that was built on the field-to-fork concept and is a 3 Star certified Green Restaurant Association (GRA) facility.

A brief description of the methodology used to track/inventory sustainable food and beverage purchases:
Centralized purchase tracking database where Aramark keeps information on where product is sourced
Database, origin, location of processing, third party verified sustainability attributes
Aramark has a sophisticated product tracking system which allows us to report virtually every purchase made by our campus team over a given period of time. Whenever we require information on procurement patterns reports can be generated detailing purchase volumes and total spend for any particular item, anywhere in the country.
We are currently in the process of building more capabilities into the system and one of the more useful features is the addition of source and processing location data attached to every item in the database. We are working very closely with food suppliers of all types and sizes to acquire this info and make it readily available. Progress in purchasing habits with respect to sustainability and the support of local producers cannot occur without a reliable benchmark. Learning more about how and where the food we buy is grown, raised and packaged will allow us to create such a benchmark and proceed to important next step of setting targets for improvement.
