A brief description of the enterprise:
The Flaming Eggplant is a student-run cafe at The Evergreen State College. We strive to use seasonal recipes based on food that is locally available and organically grown.
We strive to serve delicious, ecological and socially just food. Our intention as a collective is to foster a healthy community, support local economy and nourish our customers.
