A brief description of the pre-consumer food waste composting program:
Sodexo, the Univerity's contracted food service vendor, has pre-consumer vegetable waste from its main dining hall in the Cascade Residence Hall collected and composted by Recology Ashland Sanitary Service. In addition, Sodexo uses biodegradable plates, cups and clear glasses exclusively for its catered events when china service is not requested. The biodegradable items are collected by Campus Dining employees and delivered to the ECOS Garden, where ECOS members chip up the products and add it to their compost.
