A brief description of the guidelines for franchisees:
Apart from the two main dining services contractors managing the dining halls, there are five independent corporations (excluding small student run coffee shop) operating specific food services in six different locations and all are contractually bound to follow some sustainability policies and guidelines. The standard contract refers to the following policies and guidelines, which are added to the contract as appendix :
•The university sustainability policy, regarding among other things the disposal of waste (available at http://www.ulaval.ca/sg/reg/Politiques/PolitiqueDeveloppementdurable.pdf)
•The university food policy, regarding healthy eating and the support of seasonal and locally grown products (available at https://www.viragesante.ulaval.ca/cms/site/viragesante/page72962.html)
•The university policy regarding sexual and psychological harassment (available at http://www.ulaval.ca/sg/reg/Reglements/Reglement_prevenir_contrer_harcelement_2010.pdf)
Furthermore, the standard contract specifies other obligations regarding recycling and composting, the materials of plates and beverage bottles, the power of the university to ban specific products and the use of energy efficient appliances.
