UCCS Grain School

A brief description of the innovative policy, practice, program, or outcome that outlines how credit criteria are met and any positive measurable outcomes associated with the innovation:
Started in 2016, Grain School trains and empowers people to grow, mill, bake, brew, and steward heritage grains in their communities. The innovative curriculum covers a range of topics including the history of land-race grains, crop breeding, nutritional and health issues with gluten and glyphosate, baking and fermentation, small craft brewing and small-scale production techniques. Graduates from this program will help lead the way in a revival of localized grain economies across the Rocky Mountain West. Grain School will be held next year again in January on the UCCS campus. Students, farmers, and attendees are encouraged to help us find, test, trial and increase the seeds for ancient and heritage grains adapted to our specific growing conditions in the Mountain West as part of the Heritage Grain Trials program. The goal is to recreate a grain-shed in this region and to potentially bring back local mills.
