Sustainable Garden Design on the Front Range: Students plan their own sustainable garden. Includes discussion of landscaping principles with a focus on “sustainable gardening.” Slow Food in a Fast World: How Good, Clean and Fair Food Makes a Difference -- Students consider how food choices affect the rest of the world; learn how our food is tied to many aspects of life, including culture, politics, agriculture and the environment. An Evening with Author Michael Pollan: He discusses his new book, Cooked, an investigation of how cooking involves us in a web of social and ecological relationships: with plants and animals, the soil, farmers, our history and culture. Pollan argies that taking back control of cooking may be the single most important step anyone can take to help make the American food system healthier and more sustainable.

In the Daniels College of Business, the Executive Education and Certificates provides an Energy Land Management Program. University College, College of Professional and Continuing Studies, offers a certificate in Environmental Policy. Students develop the strategies needed to address the major environmental issues of our time and gain insight to legal challenges, renewable and sustainable energy efforts, and public policy.
