The inventory of sustainable food and beverage purchases was created from an audit of the University's 2021 calendar year purchasing data. UM Dining Services / Aramark’s proprietary program was used to capture all purchase history. Information was then extracted based on sustainability criteria and the type of food to determine what percentage was plant-based.

Aramark, the primary food provider at the UM, considers sustainability in many food categories. All coffee and some teas served at food outlets and by catering services are Fair Trade certified. Seafood is Marine Stewardship Council certified.
