A brief description of the trayless dining program:
Trays have been removed in many of our dining operations where feasible. In our satellite dining operations we have 5 locations that are completely trayless and the others have trays as an option. In two of the large dining halls trays are optional and we have signage that informs students of the amount of food and beverage waste they are generating each meal and the benefit and savings of being trayless. We check the food and beverage waste per person twice yearly and we are currently at an all-time low of 3.11 ounces per person. A recent campaign, run by a student member of our Food Services Social Responsibility Committee, included a clean plate award ($100) for the winner of a contest that students were entered into each time they came to the dish line with a clean plate. We also asked students to sign a pledge to not waste food.
