A brief description of the vegan dining program:
We offer multiple vegan entrees at each meal (21 meals per week). Additionally, we have numerous vegan options on the menu such as a vegan burger, a stir fry station that allows the students to select their own vegan options, plain and flavored hummus, soy milk, soups, tofu, edamame, vegan wraps in the deli, steamed vegetables each meal and numerous other side dishes. During the spring semester a newly renovated restaurant opened on campus that only offers a variety of healthy entrees identified with logos that inform patrons if the item is prepared using healthy techniques, vegetarian or are low fat, low calorie and low sodium. The restaurant has a wide variety of soups, salads, sandwiches, entrees and desserts, with products purchased locally when possible.
