A brief description of the vegan dining program:
We offer multiple vegan entrees at each meal (21 meals per week). Additionally, we have numerous vegan options on the menu such as a quinoa stew, various vegan lentil based dishes, vegan burger, a stir fry station that allows the students to select their own vegan options prepared in a seperate pan, plain and flavored hummus, soy milk, soups, tofu, edamame, vegan wraps in the deli, steamed vegetables each meal and numerous other side dishes. Last summer we went thru a Green Belt project where we labeled the food items in the dining halls with allergen symbols to help our student base make better informed decisions. While doing this we also marked all of the items which were considered vegetarian and vegan, to aid in these positive choices as well.
