A brief description of the pre-consumer food waste composting program:
Each employee has a 20L clear bin at their work station which is emptied every day.
Whatever is left in the kitchen before it is used by consumers is composted : they put the waste (vegetables, bread, food prep, scraps) in a pulper which gets all the moisture out and the result is then sent to Lees.
