USU celebrates Food Day each year in October with a focus on healthy and sustainable food. Earth Week in April includes chef demonstrations with local ingredients. Students have also started a Vegan News Club to encourage students to eat responsibly.

The USU Student Organic Farm is a hands-on laboratory for students to learn about organic farming and gardening practices.Students may participate through volunteer activities, employment as a farm manager, and course credit- PSC 2800 Fundamentals of Organic Agriculture and PSC 4900 Student Farm Practicum.
